Summer-Inspired Pasta Salad

My mind and body is craving summer. It was a whopping three degrees in RI this past week. I'm loving the fulfilling and healing pastas, cookies, and squashes we gravitate towards in the winter, but my mind can't keep wandering towards burgers, pasta salads, and ice cream. It doesn't help that I keep imagining eating these items beachside or poolside.

I saw something about missing the feeling of the window being down, the humid air wafting into your air-conditioned car creating a cacophony of warm and cool that is just perfect, the radio blasting and the sun still being up at 7PM. THAT is what I need besides some cookout food.

I will settle for this nostalgic pasta salad, however. Try the recipe below to invoke some "summer feels" during this dead of winter.


  • 1 Box of ancient grains tri-color pasta

  • 1/2 cup feta

  • 1/4 cup rinsed green chickpeas

  • 2 tbsp olive oil

  • 1/4 cup rinsed cannelloni beans

  • 1/3 cup chopped and rinsed red and green peppers

1. Cook and rinse the pasta

2. Let the pasta cool

3. Return the pasta to the pot and mix in all the other ingredients

4. Enjoy!
